Food for my tummy

Inspired by Closet Cooking (tagline: "Cooking in a Closet-Sized Kitchen").
Moroccan Roasted Carrot Chickpea Quinoa Salad
Ingredients:
Makes 10 servings
• 8 large carrots, cut into thin slices  
• 3 tablespoons olive oil
• 2 teaspoons each of paprika, turmeric, cumin, cinnamon, black pepper, and salt (or any combination thereof)
• 2 cups red quinoa
• 4 cups water or vegetable broth
• 2 cups canned chickpeas (drain first!)
• 1 diced red or yellow onion
•  ½ cup toasted pine nuts
•  4 tablespoons oliveoil
•  2 lemons, zest and juice
•  Additional salt and pepper to taste
The Method:
• Combine carrots, three tablespoons olive oil, and half of the spice blend and roast in a 400ยบ over for about 30 minutes or until they are tender. You might need to flip once or twice.
• Simmer the quinoa in water along with half of the remaining spice blend until the water is absorbed, about 20 minutes.
• To make the dressing, combine three tablespoons of olive oil, lemon juice, and zest, remaining spice blend.
• Mix together carrots, quinoa, chickpeas, onion, and pine nuts in a bowl and toss with the dressing to taste.

Latest food trend.

so Here's our latest on our food trend... I am so happy I got introduced to Quinia! when i first saw i mistakened it for couscous. What it is is a fluffy grain that comes from the Incas. it's an awesome substitute to rice. Being vegatarian and Gluten free i find myself resorting to rice a lot and I really don't want that esp bc rice isn't the healthiest and i like to eat well. Quinia is a fluffy grain that is really high in protein and low in carbs. best of all it's GLUTEN FREEE. tHE FIRST tiem i made it at home was This past Thanksgiving Nov 2010. it's been around for forever, but it was only when i was in Egypt that i became introduced from foreigners living in egypt. What's so cool about it too is that you can make so much out of this grain, i have got all these recipes that call for quinoa in your breakfast lunch and dinner meal.. from muffins to pancakes, to quinoa as a salad entree and as a rice substitute.

I learned from my Aunt a delicious recipe and today I finally made it. i promise you that this is sure to become everyones favorite and especially if your like me and gluten intolerant you better believe that this is your new best friend! I cooked Quinoa with the recipe she gave me: sauteed some onions for 5 min, added carrots and cooked it for 3 minutes then poured in my quinoa and vegi broth and cooked for another 15 minutes. I also added in some garlic but I am not sure if the recipe calls for it. After cooking it on medium low for fifteen minutes i poured it in the serving bowl and mixed in parsley and walnuts. It was so tasty that we housed it all! I also made sweet potatoes, sprinkled a little olive oil, garlic, oregano, and paprika. I actually purposely didn't eat much quinia bc i wanted to devour all the sweet potatoes. It was delicious. Here's a cool article i came across today about my best friend, Quinoa.

To be Vegan or not to be.. that is the question!

I Have spend months trying to figure out what caused my constant stomach bloating and nausea. You know if i actually listen to my body, I am sure I will know what's wrong. I know dairy bothers my stomach but I refuse to listen. I always had an extremely sensitive stomach and I constantly have stomachaches. I know if I can go vegan my problems will vanish. I know most my problems come ffrom the poor food im allowing to enter into my body. I just can't seem to listen and go vegan. Why? I feel as though I will be so limited and I cant help but crave cheese and chocolate?.. what to do?

Ive been wanting to read The kind diet but i've been putting it off.. Im unsure wy.. i think it's time i pick up that book. Let you know how it goes!
